It was time consuming and somewhat difficult, though. I heard a recipe on a recent podcast of The Spledid Table and decided to try it. Works wonderfully! This is nice because there is no kneeding. It is a very wet dough that requires a really long rise. My problem was a simple failure to balance tastes on this one. Cointreau is often described as sweet, but it really has a bitter overtone and needs lots of sour acid to balance it. I was not using enough lemon juice. Equal parts good Congac, Cointreau or Grand Marnier, and fresh lemon juice. Best if you strain the juice for a clear drink. Ocassionally my favorite changes, but one thing that stays the same is that I like simple paste.  Deceptively simple. My past favorite was bucatini all 'Amatriciana; just onions, garlic, butter, tomatoes, and pancetta with some bucatini. It took a while to get the carbonara just right. This morning The Lovely S and I got our vaccinations for an upcoming trip to Taiwan and China.  The Lovely S needed only a Tetanis shot, but I needed Tetanis, Hep A, and Hep B.  Surprisingly, though, not painful.Now the end-of-summer vacation begins.  I am vacationing until Monday, 11 September.  But don't worry, I'll keep you updated.
