The Week in Food: Envelope O' Fish!

Well, thankfully, this week's culinary experiment turned out much better than the last one. The Lovely S and I have long enjoyed watching Good Eats, but for some reason, we have seldom tried any of AB's recipes. We are rather obsessed, though, with trying his pouch ideas. Tonight, we baked a whole fish in a parchment pouch with couscous, parley, thyme, lemon, onion, garlic, tomato, artichoke hearts, salt, pepper, and white wine. Damn, it was tastey! We like these pouch recipes because they are quick and easy, they steam in all the flavor, and with all that trapped moisture it is practically impossible to overcook the fish. Cleanup is a snap!

Tonight we used a whole sea bass, stuffed with some lemon, sliced onion, thyme, and parsely, surrounded with about a cup of uncooked couscous, a diced tomato, a jar of drained artichoke hearts, two cloves of minced garlic, salt pepper, and a half cup of white wine. We sealed it all up in parchment and baked for 30 minutes at 425. Only problem is I still want more!

By the way, tonight's blog post would have been an adorable video of of our cat Halle engaging in her strange/obsessive habit of chasing hands on the teevee screen. But I could not figure out how to get blogger to accept videos. Any ideas? Please clue this ludite in with your comments.
